Nestled in the heart of Carmel Valley wine country, the celebrated retreat introduces a new chapter in its culinary story with Executive Chef Gus Trejo. Chef Trejo is known for his seasonal, sustainable approach that celebrates the region’s bounty, and he now brings that philosophy to the hotel’s beloved Lucia Restaurant & Bar. Guests can expect thoughtfully crafted farm-to-table menus and memorable experiences like the signature Chef’s Table, all shaped by his distinct vision.

Rooted in the Central Coast and refined by global training, Trejo’s style blends storytelling, heritage, and deep reverence for the land and sea. Influenced by his Portuguese-Latin background and formative years spent on his uncle’s ranch in Portugal, he developed a profound appreciation for the care behind every ingredient. These early experiences continue to guide his culinary philosophy today, inspiring dishes that are as meaningful as they are delicious.
